May 2025 | Khachapuri Index's downward trend continues

The average cost of cooking one standard portion of Imeretian khachapuri was 6.46 GEL in May 2025. Continuing its month-on-month downward trend, the price declined by 5.6% compared to April 2025. However, it remains 10.7% higher than in May 2024.

On a monthly basis, prices for about half of the ingredients increased slightly: flour (+0.5%), eggs (+0.8%), and butter (+0.5%). The most notable change was a significant 9.1% drop in cheese prices, largely driven by seasonal increases in milk production.

Year-on-year, the Khachapuri Index rose in all four major cities. However, on a monthly basis, the Index declined in most locations, except for Batumi. The sharpest monthly decrease – 16.0% – was observed in Kutaisi. This drop follows the typical seasonal pattern linked to fresh milk availability. Cheese prices in Kutaisi tend to show more pronounced seasonal fluctuations than in other regions, likely because Imereti, where Kutaisi is located, is the country’s largest milk-producing region. As the milk season begins, increased supply puts downward pressure on cheese prices. In contrast, Batumi saw a monthly increase, likely driven by rising demand during the start of the summer tourism season on the Georgian seaside.
