In November 2025, the average cost of preparing a standard portion of Imeretian khachapuri increased to 7.47 GEL, marking a 2.3% rise compared to October 2025 and a 10.3% increase year-on-year. The seasonal rise in the Khachapuri Index was primarily driven by higher milk and dairy prices, reflecting a seasonal decline in fresh milk availability and increased reliance on imported milk powder.

Most khachapuri ingredients recorded moderate monthly price increases in November. The most notable increase was observed in eggs, which rose by 6.4% compared to October 2025. This increase was driven by several factors: a decline in egg imports, temporary restrictions on the import of breeding poultry during April–May, and unusually warm temperatures in November, which contributed to the spread of seasonal poultry diseases.

In annual terms, ingredient prices increased substantially. Butter prices rose by 13.6%, followed by cheese (13.2%), flour (12.1%), and eggs (9.8%). In contrast, yeast and milk prices declined, by 9.3% and 4%, respectively.

Looking ahead, rising seasonal demand during the holiday period, combined with expected winter supply constraints, is likely to place additional upward pressure on essential food prices in the coming months.
