In November 2024, the average cost of preparing a standard portion of Imeretian Khachapuri increased to 6.77 GEL, marking a 2% rise from October 2024 and a 4.8% increase compared to November 2023. This seasonal rise in the Khachapuri Index is primarily driven by higher milk and dairy product prices, resulting from a seasonal decline in fresh milk availability and increased reliance on imported milk powder.

Most Khachapuri ingredients saw moderate monthly price increases in November. Yeast experienced the highest rise at 4.4%, followed by cheese (3.2%), milk (2%), butter (1.5%), and eggs (1%). Flour was the only ingredient to register a slight decline (-0.1%), reflecting a broader global trend. Wheat prices on international markets have been falling since October due to a record global harvest. In the U.S., wheat output is projected to exceed earlier expectations, as confirmed by the Federal Service. Similar record harvests in Europe and Asia have expanded global grain supplies, driving down prices. This declining trend is expected to reach Georgia in the coming months, as global price shifts typically take time to impact local markets.

In addition to these monthly increases, Khachapuri ingredient prices have also risen significantly on a yearly basis. Yeast prices surged by 20.1%, followed by butter (14.1%), milk (12.5%), flour (4.1%), and cheese (3.4%).

Over the next few months, rising demand during the holiday season and anticipated winter supply shortages are expected to exert upward pressure on essential food prices.
