In December 2024, the average cost of preparing one standard Imeretian khachapuri rose to 7.03 GEL, marking a 3.8% increase compared to November 2024 and a notable 8.4% rise compared to December 2023.
Traditionally, during the festive season, characterized by heightened demand driven by preparations for Christmas and New Year's supras, the index tends to rise month-on-month. In December 2024, the price of cheese surged by 8.8% compared to the previous month, while other ingredients saw slight decreases.
On an annual basis, the Khachapuri Index showed price increases for all ingredients except eggs, which experienced an 8.4% decline. The most significant annual increase was observed in cheese price (+12.3%), followed by butter (+11.3%), yeast (+9.3%), milk (+8.9%), and flour (+3%).
From a historical perspective, an analysis of December data from 2015 to 2024 reveals that the average cost of preparing one standard Imeretian khachapuri in December 2024 nearly doubled compared to 2015, increasing from 3.77 GEL to 7.03 GEL. The lowest December cost during this period was recorded in 2016 at 3.61 GEL. The Khachapuri Index for December 2024 set an all-time record, exceeding the previous peak of 6.99 GEL, recorded in December 2022, by 0.6%.
The previous peak in 2022 was attributed to the exceptional circumstances of that year, primarily driven by the war in Ukraine, which caused a sharp increase in ingredient prices. Following a decline in 2023, the Khachapuri Index in December 2024 caught up and resumed its upward trend.
