December, 2020 | New Year Supra Index – 2020 Edition

ISET Policy Institute likes to keep our tradition alive and cook up a New Year’s Supra Index for our readers every year. The Index shows the cost of a standard festive “supra” meal for a family of five or six people in each region of Georgia. Traditional dishes included in our calculations are: mtsvadi (grilled cubes of meat), satsivi (chicken in walnut sauce), khachapuri, trout, (pan-fried) chicken tabaka, salad Olivie, pkhali (chopped and minced vegetables with walnut), cucumber and tomato salad, and for dessert, fruit and gozinaki (caramelized walnuts fried in honey). The price of the New Year’s supra, of course, depends on the variety of dishes served for the feast.

Just like every Georgian family, ISET Policy Institute is preparing for the New Year, and we keep to our traditions and have cooked up a New Year Supra Index for our readers. The Index shows the cost of a standard festive supra meal for a family of five to six people in every Georgian region. The traditional dishes included in our calculations are: mtsvadi, satsivi (chicken in walnut sauce), khachapuri, trout, tabaka (fried) chicken, olivie salad, pkhali, cucumber&tomato salad, and for the desert, fruit and gozinaki (caramelized walnuts fried in honey).

This week we are offering a special edition of the Khachapuri Index. For this edition, we asked our relatives and friends who live abroad to tell us the price of khachapuri ingredients they are buying. Unfortunately, they cannot buy Imeretian cheese in their counties of residence, so they usually use mozzarella or feta cheese to make khachapuri. Of course, even mozzarella cheese brands and prices vary from country to country.
